easy, easy summer side dish

Cranberry Salad..a nice cool side dish for a hot summer day.

2 cans of cranberries, whole berry style

1 can of crushed pineapple in heavy syrup

1 frozen container or package (12 to 16 ounces)of sliced sweetened strawberries, thawed

1 frozen package of sweetened raspberries (12 to 16 ounces), thawed (nay use unsweeted for a more tart salad)


Mix together in a collander to allow excess juices to drain, let chill in the refrigerator for a few hours to let flavors meld.

Goes well with anything and is cooling and refreshing.


Also makes a great dessert. Serve over ice cream (especially good over Artisian Vanilla Bean) or on top of Angelfood or white cake.

The drained juices

sound like they'd be a great base for a refreshing cool beverage--with iced tea, or perhaps orange juice (Minute Maid reduced acid--green can.)

The drained juices are good. I usually save them and drink them. However, they are a bit sweet. That's a great idea, Lawrence, to cut the sweetness with some orange juice or tea.

Yes, Kevin, it's good over vanilla ice cream and very good on Angel Food Cake.

I like your idea of putting it on pound cake!
