Traditionally we always had poppy seed roll at Christmas and Easter, this year is no different. I've posted in the past about my difficulty in finding a good poppy filling for my rolls. My absolute favorite was Chicago Almond poppy filling, all but impossible to find anymore. I HATE Solo poppy filling ---HATE.
Sifting through many poppy filling recipes on the web I've cobbled together one that I really like and thought I'd share as I know there are a few of us Polish folks on this site. I buy poppy seeds in bulk from Amazon, I got the Just Nuts brand 2 lb bag for about $15 last fall.
Poppy Filling
2c dry poppy seeds
Place in a medium sized pot, cover with water by at least 1"
Simmer on very low heat for 30-45 minutes -- DO Not Boil!
Drain and rinse soaked seeds any number of times until the water runs almost clear, may take 4-5 minutes.
Run the drained seeds through a grinder, I use my KA with the fine disk, Twice.
To the ground poppy seeds add:
1/2c sugar
2/3 c. Honey
1/2c Corn syrup
dash of Salt
Vanilla
juice of 1/2 Lemon -- or more if you like.
Mix and simmer over very low heat for 15-20 minutes stirring often. Cool.
Use your favorite sweet dough recipe, this makes 4-6 12" rolls with generous filling.
