The last of the wonderful Michigan sweet corn is at the market and so Ralph and I made some fluffy corn fritters to go with our dinner.

Kevin those look great!  It's been such a loooooooooong time since I've had corn fritters, I loved them when my mom made them.  I have GOT to make these!

 

GREAT idea to use the bundt pan when cutting the corn off the cobs, I wouldn't have thought of that!

Folding in the whipped egg whites raises the bar for the texture of these comfort-food delights. My favorite banana bread recipe uses the same technique. Great job as always, gentlemen, and a thumbs-up for soundtracking it with The Mills Brothers.
