A couple of weeks ago I made buttermilk pancakes and I had leftover buttermilk, so we made this pound cake. It was nice and moist, and we ate it with blueberries and vanilla ice cream!

Looks great, Kevin. I use a lot of whole buttermilk for baking. All chocolate cakes, pound cakes, certain dinner rolls and almost all quick-breads. I like the fine crumb it adds to cakes. The soda is the critical element, I think.

Great job, guys! First time I recall seeing a square tube pan.  I no longer have tube or Bundt pans; do you think this pound cake could be made in a loaf pan or does it require the tube to ensure the center isn't undercooked when the outer area is done?

 

Have to give a shout-out to Happy Home brand flavorings.  Hans (norgeway) gave them high marks in a post a few years back.  Tried them via online ordering and have been using them ever since. The Butter and Nut or Black Walnut flavorings are perfect for cakes, muffins and quick breads. Their pure lemon and vanilla extracts are fantastic, as well.

 

Aside:  Duke Ellington's 'Uptown' is a favorite.  Found it many years ago as an album of 78's.  When those were divested, I bought it at iTunes.  A must-have for Ellington fans. Cavalcade has the classiest background soundtracks of any cooking show on YouTube.

Another of Kevin's must-try buttermilk recipes is his Buttermilk Meatloaf.  Discovered it watching episodes of Cavalcade of Food on YouTube; then realized he'd posted it here back in 2011.  

 

Absolutely the best meatloaf: Moist, delicious and fantastic in a sandwich.

Eugene, if the batter fills no more than 2/3 to 3/4 full for a 9 x 5 loaf pan.  It might be better for two 8 x 4 loaf pans though.

If you ever publish a cookbook, this would make an appropriate cover.  I find it comforting during my daily bouts of binge eating.

Eugene - yes, you could make this in loaf pans, although this recipe would likely require two pans (you would have two cakes - one for now and one for later!)...Bob's advice on this is good to follow. Glad you like the meatloaf recipe, too!

I discovered Happy Home flavors when I was in NC and visited the farmers market in Greensboro and one of the vendors had the whole line of flavors...I stocked up! They are not sold here in Michigan although I know I can always order online. Hans uses them also, so that was an endorsement for me!
