Am I correct in believing that door panels on a convertible portable would be interchangeable with the comparable built-in model... i.e. panels for a 57 with a 17?

Yessir!

Convertible Portables were undercounter units wih side panels and tops on them. Panels were the same for the doors and lower panels. Whether you can find them anyplace is another matter. Hopefully someone on here has a Vari Front panel kit with the multi color panels that they would be willing to get rid of.
I have a load of kits for the 18 thru 22 series but they are not the same dimensions as the 15-17 series were.

I am assuming that you have the plain wrap around painted panels and not the custom front panel kit on your machine.

The lower panel on the convertible has extra holes drilled in it so the chrome trim that helps hide the front wheels can be attached, but these holes can be drilled if you are using the trim, if you are building the machine in you can leave the trim off.

Vari-Front Panel Kits

came with white, black, almond and harvest wheat panels in the chrome edged style.
This is the KDC 21 in white. That machine eventually got stainless panels.
You can remove the metal panels and install wood or plastic panels up to 1/4 inch thick.

Another Lady in Waiting

Here is the panel kit in Sexy, Classic Black.

This may well become my daily driver when and if my wife finds out about the K/A tall tubs that go on fire! She would trade that TT out in a heartbeat. She has always had Classic and vintage Kitchenaids and still wants the older style back!
