Does anyone know of a new washing machine that will allow me to select a warm rinse? Has anyone modified their plumbing so that you can control valves to have the choice between cold+hot and cold only?

Can you elaborate on this? Are you talking about top loading or front loading machines? Or just any machine in general?

There might be "older" machines still available online. Quickly browsing AjMadison, for example, yields:

Maytags from the EcoConserve series, Whirlpools from the WFW9xHEX series, old Whirlpools such as the  WFW9750 and 9550, the Electrolux 70 and certainly some LGs and Samsungs as well.

TLs use more water so it's harder to find models with a warm rinse. You're most likely limited to HE top loaders. I couldn't find one.

The Speed Queen front loader will allow you to select a warm final rinse. You can even set the cycle control to RINSE AND SPIN and, if the water temperature control is set at WARM/WARM, you will get a warm rinse.
