The story is much simplified for the sake of journalistic brevity.  Rinsing isn't mentioned, or multiple wash phases and detergent releases.  If the article is taken literally, the dirty dishes are washed with a single fill of water and dried without rinsing.  And heating to 145°F in 10 mins?
