I noticed right away that the cabinets in the first post were laminate rather than wood. What I'm not sure about is whether they were originally so, or were refaced at a later date. I believe them to have been constructed on site, so may be difficult to remove intact. My mom's friend Louise had her Lyon steel cabinets refaced with dark woodgrain Formica by CabinetPak sometime in the late 60's, and it was not an improvement by any means. It made a previously light and spacious kitchen cave-like.

Hans, I don't know why you would have any trouble finding laminate cabinets now. They are widely used in commercial applications such as medical offices and office break rooms. There's a company here in Cincinnati (Pro-Lam) that can make them to the customer's specifications in just about any laminate. I'd think there would be similar companies in your area. The price is usually the same or less than mid-grade wood cabinetry.

As for the sink, I've seen them with the recessed disposer well, but not with such a wide, shallow bowl. It doesn't look like the right bowl is any deeper than 4". I don't see Carlton sinks very often, but the church I belong to has one that is a single bowl. The other large two-bowl sink is an Elkey. Both installed in '59. Hope you can get this one. A similar one by Elkay or Just in their standard size is over twice what they want for the whole kitchen. I'd imagine a custom size would be over $2000.
