Had the pleasure to work with a somewhat simmilar one at one point in a school laboratory. These things are insane, those arms are designed to deliver powerfull sprays through those metal tubes into laboratory glassware. Different cycles use different temperature and cycle profiles to adapt to different kind of soiling. These even have a seperate water supply for special final rinse water for use cases where you need 100% residue free finishes. Insanely sophisticated machines!

Yes, these dishwashers would certainly be a good choice for them. The Hygiene models from the Professional line allow up to ten minutes of washing and/or rising at 200°F.

Would be this undercounter Hobart which is designed for DISHES and meets all NSF protocol. Even with the Advansys Energy Recovery it is still thousands less and more effective as a dishmachine.
