Being Southern, of course I love pimiento cheese. I grew up eating it in sandwiches and usually at church things someone would plop some in celery troughs.

I like Price's brand best these days, used to get Leo's but it's gone. Wal-Mart sells Mrs. Weavers which isn't that good unless I'm desperate.

Does anyone on here have a truly good recipe for making pimiento cheese? I bet I've made a hundred over the years and while some were pretty good, a lot were just plain awful.

Is all cheese really cheese?

No. Velveta for example is a cheese food. It has some milk, but is mostly hydrogenated oil.
This affects texture and flavor.
I'd buy real cheddar cheese, or any other you like, a jar of pimentos in olive oil,
or drain them and add some with your chopped or shredded cheese in a food processor or blender.

I like it plain

don't care for sweet or spice. I make the below at least a couple times a month..very simple.

1 block of grated extra sharp cheddar cheese [ do not use the already grated]
1 large jar of pimientos drained
cracked black pepper to taste
enough mayo { okay..whatever you like..Kraft, Helman's or Dukes..I use Helman's}
to bind everything together.
chill for a few hours before serving
