How to use and clean a vintage Hobart C-Line dish machine. This is the CRS-66 with a 22 inch Prescrapper and single tank wash/rinse section. Wash temp is 160f and rinse is 180f. Racks pass through the machine at 6.5 FPM. These were extremely well made, reliable and good performing dish machines. Enjoy!

I noticed one very glaring omission in the "Dishwasher not cleaning" section. They never mentioned dirty wash water as a cause. Changing the water and cleaning scrap trays resolves most cleaning issues. I also liked seeing the vintage Ecolab dispensing system. I remember those from culinary school and the Marriott hotel I worked in during that time.

I remember when the health departments said that the curtains had to go for hygenic reasons. These were obviously brand new curtains. The old canvas ones get brown in use. The draining of the rinse water back into the wash tank helped replenish the wash water as well as keep it hot. Did the wash tank overflow into the scrapper in this machine?

Why didn't they show the upper wash arm?

Funny how they did not show the operator wearing heavy rubber gloves when working around all of that hot environment. You can't overemphasize safe procedures.

Wash tank overflow

Yes I believe the wash water overflowed into the prescrapper. I can't imagine running one of these without curtains. Not only would the operator get burned by hot water and steam but it would be difficult to keep the wash water hot.

I believe the Early CM and XM series ( Not sure on the C series) They were a Canvas Like Cloth that I can remember I saw on a CM series in 1965.

I could see if they were not Bleached and Washed Every Night there would be serious mildew and Stench.

Back in those days people who ran Dish Machines took the job seriously. So, those curtains got Washed.

I think I did see a glimpse of the Upper Wash Arms. On that machine, the upper wash arms were a Larger version of the lower assembly.Instead of three Rows of Jets like the Lower Arm in the vid, the Upper is four rows of Jets.

The First C series machine had a Revolving Upper Wash Arm.

You are Correct on the Overflow/s. The Main Wash Over flows to the Pre Scrapper. So... Fresh Final Rinse Water to Main Wash, Wash Overflow to Scrapper and then Scrapper overflow goes down the drain.
