We are big fans of Thai cuisine, and this dish was inspired by something I recently enjoyed in a restaurant. If you had the time, you could make this in a slow cooker, but I used a Dutch oven and cooked it in the Westinghouse.

Thank you! Love the NICRO vacuum brewer on the stove. Why isn't the light indicating the heat setting visible, ambient light too bright? When you use that Farberware saucepan on the 8 inch element, did you start on medium high to avoid heating the outer ring? Those old 5 heat Corox elements and switches offered great heating pattern flexibility that a lot of people never even realized was there.

Love Thai also. I'll have to try making it with breast meat, as hubby isn't fond of dark meat.
How do you think it'd be with one more additional Indian seasoning of garam masala, which has corander in it? Bell peppers too maybe?
I had it once from a place that put fiddlhead greens in it. It was good.

Tom - there's too much light over and around the stove to see the "Color Glance" controls with the camera, but I can see them. The area that lights up in color is actually fairly small. Yes, the medium-high setting fits that Faberware saucepan perfectly! Thanks!

Mike - Thanks@ Adding garam masala and bell peppers would be great - hope you try it!
