We love squash and when I saw a can of butternut squash puree in my local Trader Joes I figured it would make a nice pie. I was going to make my standard pumpkin pie recipe and just switch out the pumpkin puree for the butternut puree. And then Ralph said, "why don't you add some coconut?" and it turned out great!

Kevin,

I made made this fantastic recipe for a pot-luck luncheon today and lemme tell ya...it was DELICIOUS. I had to wait for Trader Joes to restock and found it on the shelf, finally, yesterday.

I did not have any heavy cream on hand at the house, so I whipped up some evaporated milk as a whipped topping....I cut 12 slices into the pie and, well, they were gobbled down with everyone loving it. Thanks for the share.

MMMM Love it!

I think it is also great for a breakfast or brunch dish. My neighbor served us a coconut quiche for brunch a while back. It was also delicious.
I may try it sans' the evap. milk, maybe add 2 extra eggs, more brown sugar?
