Is anybody out there experimenting with Cauliflower Pizza Crust?  We are trying to cut down on Gluten, and given that I'm Italian and Pizza is like air to me, we have been trying these crusts.  This one is pretty good.  Others I've tried fall apart or are too soggy, etc.  I've been using the frozen riced cauliflower to save time and effort but I did put it in the food processor to see if I could get it a little finer.

 

Anyone out there have recipes or experiences to share?

A friend recently got a frozen (I think) pizza from Costco with a cauliflower crust.    We were skeptical about the crust's ability to hold together until we saw rice flour on the ingredient list.   Gluten-free it wasn't.

 

I'll have to remember to ask him what he thought of it.

I expected it to taste like cauliflower but it didn't.  This one holds together pretty well.  The key seems to get as much of the water out as you can.  I haven't seen any frozen ones in the stores here but I haven't looked that hard either.  We don't have Costco :( in Little Rock but I hear they are really nice stores.

 

My sister lives in Denver.  We were there a couple of weeks ago and I had my first one in a restaurant which prompted me to want to try making one.

Rice does not produce gluten,. Rice flour is ground rice, but it is not like wheat flour in composition. Gluten-free baking mixes and products use rice flour in their formulas. You will be safe eating this crust. rice is one of the most allergy-free foods that you can eat. It is the first food allowed on food allergy elimination diets.

I have no gluten issues that I'm aware of, nor have I adopted any gluten avoidance practices.  I had been making the erroneous generalization that starch = gluten until I read your post.

Well, I'm trying out a low carb diet, and I was interested in this cauliflower crust pizza until the mention of rice flour... however I can check the label and if the carb amount is low, I might give it a go.

More of a problem are the frozen pizzas in the freezer that I won't be eating any time soon, except in tiny bites.
